Vendanges 2015 au Château Saint Sauveur / The 2015 Harvest of the Château Saint Sauveur :
Le domaine étage ses parcelles sur le plateau et les côteaux du Mont Saint Sauveur, ancienne propriété des moines cisterciens. Le Mistral et la situation en coteaux aura permis un bon drainage des pluies d'automne et de printemps aux moments opportuns. Le canon à grêle aura été activé à plusieurs reprises et le domaine épargné.
Conséquence des très fortes chaleurs estivales, la récolte offre un très bel état sanitaire, mais de faibles rendements (à ce stade au moins 30 % inférieurs à ceux de l'année précédente).
Les vendanges ont débuté le 7 septembre sur les Muscats, très aromatiques, promettant un grand millésime en moelleux, quelques rangs ayant même été conservés pour vendanges tardives.
Les parcelles du plateau, et en particulier les grenaches offrent de petites baies aux très faibles rendements, très concentrées, à la peau épaisse et tanins parfaitement mûrs.
Ce premier millésime certifié bio, comparé qualitativement à 2012 par Florence Rey en charge de la vinification, se déclinera principalement en Crus et vins rouges concentrés et denses.
The estate spreads on the plateau and slopes of the Saint Sauveur mountain, which once belonged to the Cistercian Monks. Mistral and slopes participated to te good drainage of autumn and spring rainfalls. The gun safeguarded the vineyard from hail.
Consequence of a very warm summer, the harvest is very healthy, but of small volume (at this stage, yields are expected to be down by minimum 30 % compared to the previous year).
Harvesting started with very aromatic Muscat grapes, promise for a great sweet wine, the harvest of some rows having been postponed to a later stage for the production of a "Late Harvest" cuvée.
The plots located on the plateau, and particularly the Grenache are showing tiny berries and low yields, with much concentration, thick skins and very ripe tannins.
2015 will be the first fully organic certified vintage of the Estate. It reminds Florence Rey, in charge of the winemaking process, of the 2012 vintage, and will be offering Crus and red wines of high concentration and density.
